
It's Easter weekend and I thought I would share some of the things I love about this holiday.
1. Hiding Easter baskets. Really I love this part. Sure the shopping and the filling is fun too but it's too easy and too fun to frustrate the heck out of my kids by hiding their baskets. This is a time honored tradition that my mom did for me and my sister and brother so I get to torture my kids with it every year too. When I was a kid I was a big chicken and would creep around the house barely peeking around furniture to find my basket. I always thought the bunny was going to jump out and scare me or something. LOL
2. Little Hershey easter bunnies. Every holiday there is a new chocolate shape. Is it just me or are those the freshest Hershey's chocolate ever.
3. The Easter Egg Hunt. I have hundreds of little plastic eggs that I fill and hide every year for the kids. My youngest is almost too old for it :( but my nephew is here this year and he is only six so the hunt is on!
4. Making the traditional Bunny Cake. I've been making this one since I was a little girl and it truly is the easiest cake to make.
INGREDIENTS
1 (18.25 ounce) package yellow cake mix
3 3/4 cups flaked coconut
1 (16 ounce) package vanilla frosting
30 small jellybeans
4 red licorice
DIRECTIONS
Heat oven and prepare two 9 inch round baking pans as directed on cake box. Prepare cake batter with as directed on package adding in 1/2 cup of coconut. Divide batter evenly between the prepared pans. Bake and cool cake as directed on package.
When cooled, place one whole 9 inch cake layer on serving tray, forming the bunny's head. Cut 2 convex shaped ears from each side of the second layer, place on each side of head to form ears. Use concave shaped piece for the bowtie, place about 1/2 inch below head.
Frost entire bunny covering top and sides of bunny. Pat remaining 3 1/4 cup coconut evenly over top and sides. Decorate the bunny face and bowtie with jellybeans and use the licorice to make whiskers.
